JO’S WINEMAKING / VITICULTURE The grapes for this Merlot were picked and crushed during the cool of night, thus ensuring the retention of varietal character. Modern winemaking techniques were employed throughout, all of which help to create the signature McPherson style. Fermentation took place in sweeping arm red fermenters, giving the wine a denser, richer colour and allowing for gentle flavour extraction. Softer tannins are also a result of this process, an important feature of the McPherson Merlot style. Oak for this wine was predominately French oak and this wine was aged on oak for approximately 6 months, giving the wine a noticeable, but not excessive oak influence.
JO’S HARVEST NOTES As a Winemaker, the challenges that each harvest brings never cease to amaze me. Just when you think you have an understanding of what’s going on, another season hits bringing with it yet another challenge and a completely new scenario. In 2015 we had little rain and warm tempratures, leading to fast ripening early in the season. Once temperatures cooled, things slowed down and we saw an increase in flavours and quality resulting in a good year all round.
JO’S WINE DESCRIPTION The Angus is a smooth, rich wine offering intergrated flavours of plums and blackberries with notes of spice and fruitcake. The elegant and balanced palate displays excellent length complemented by subtle oak.
JO’S FOOD RECOMMENDATIONS A lovely medium bodied wine that works beautifully with curries, spit roast lamb or soft cheese.
